These cupcakes are not only a delightful way to indulge your sweet tooth but also a fantastic example of how you can enjoy treats without added sugars.

Here is the list of Ingredients you need:

  • 150g (5.3 oz) unsalted butter, softened

  • 150g (5.3 oz) ZUKR, ground into powder

  • 3 large eggs

  • 150g (5.3 oz) self-raising flour (use gluten-free for a gluten-free option)

  • 1 tsp baking powder

  • 2 tsp vanilla extract

  • 1 ripe banana, mashed

  • For the Frosting: 200g (7 oz) unsalted butter, softened, 400g (14 oz) ZUKR powdered icing sugar replacement, 2 tsp vanilla extract, 2 tbsp milk

  • For the Topping: Sliced banana (fresh or dried), crumbled freeze-dried mango

Prep Time: 60 mins ā³| Approximately 200 calories  | Servings: 16 cupcakes šŸ„£

Directions for Cooking 

  • Prep: Preheat oven to 180Ā°C (350Ā°F). Line a 16-hole muffin tin with cupcake liners.

  • Mix: Cream the softened butter and powdered ZUKR until fluffy. Beat in eggs one at a time, then vanilla extract.

  • Fold: Gently fold in self-raising flour, baking powder, and mashed banana until just combined.

  • Bake: Distribute batter among cupcake liners. Bake for 18ā€“20 minutes or until a toothpick comes out clean. Cool in the tin for 5 minutes, then transfer to a wire rack.

  • Frost: For frosting, beat softened butter until creamy. Gradually add powdered ZUKR, vanilla extract, and milk; beat until fluffy. Optionally, add green food colouring.

  • Decorate: Frost-cooled cupcakes and top with freeze-dried mango and banana slices.
